first off you need:
4 boneless,skinless chicken breasts
1 red pepper-choped into bits
2 garlic cloves-finely choped
some parsley-about a handfull
2 tablespoons of olive oil
goes good with
either pasta or potatoes with some green salad.
to get things going...
Pre-heat oven to 400 degrees Place the breasts in a roasting tin or dish
now.. chop red pepper and garlic in a grinder or foodprocessor until really chopped- if you only got a knife..thats ok-just chop it up alot-place in bowl- stir in oil with mix. now spread that mix all over the chicken-dont be shy. that will be the crust.
Spoon 2 tablespoons of water into the bottom of the baking dish and roast the chicken-uncovered-30 min.
serve with side dish.

Red Pepper Crusted Chicken
tuna and cheese pasta
ok this is a nice cheap meal
what you need:
some penne past(like 10oz)
12 oz of brocoli tops
8oz of cottage cheese
chives(just cut up a bit and add to mix)
5oz grated cheddar cheese
can of tuna (drained)
3 steps
1. cook pasta in large pot of boiling water for 10 -12 min until tender,adding the brocoli during the last 4minutes of cooking.
2. Drain pasta and brocoli,then place back in pot. stir in cottage cheese and cheddar cheese -it will melt into the pasta.
3. gently mix in tuna-try not to break tuna up so much. add some salt and pepper and serve.

Nanny's Stew with dumplings
Just got off the phone with my grandmother and was aking about her old stew recipe.
Truthfully i dont know much about stews but felt like trying to make one.
Its fairly simple.
heres the stuff you need.
1 lbs of stewing beef
3-4 carrots
4-5 potatoes
1/2 turnip
whole onion(optional)
cabbage(optional)
1 teaspoon salt.
To Start:
Brown the beef before anything else.dont fully cook.
chop up the carrots into average size pieces
cut the potatoes into squares,not too small though.
cut turnip into pieces aswel, not too small though.
i personly dont really like onions,but i would be lying if
i told you it doesnt add great flavour. So i use a whole onion and cut it into 4 pieces,just to add and leave it in for flavour.(you can always then remove it when the stew is done)
cut up the cabbage and add some if u choose.
Use a nice size pot. Cook on medium.
add the brown beef.
add carrots and turnips first.
then add some water.
those take longer to cook the potatoes.
your mix should be in, your pot should be atleast half full of water.
cook for like 15 minutes. stir.
now add chopped up potatoes, onion,and cabbage.
add teaspoon of salt. stir. keep cooking the mix on medium for 1 hr.
u should start seeing the stew becoming a STEW! just keep stiring and checking.
I personaly let it cook for like 2 hrs..slow cooking just brings out more flavour.

Dumplings for stew (optional)
i have to say..ITS ALL ABOUT the DUMPLINGS!
maybe its just me but i love them with the stew..Irish style.
what you need:
1 cup flour
2 tespoons baking powder
3 teasoons of shorting or lard
1 teasoon of parsley(optional)
1/2 salt.
MIX the above all together....
now add 1/2 cup milk.
its will be a really sticky mix you should now have,use a spoon and just scoop up a bit and drop it in the stew that is finishing up. cover stew and let cook for 5minutes,the dumpling will take form on there own in the stew.

ghetto caserole recipe
a personal favorite that is super cheap and simple to make.
stuff you need: 1-2 box's Kraft dinner (oh yeah!)
milk -less then 1 cup
butter or margerine
1 can of Tuna fish (u could add more)
crakers
gratted Cheese (optional)
to start.. make the kraft dinner like u normally would.
when the kraft dinner is done, strain water out.
add some butter and the cheese mix as u normally would, stir.
Open the tuna and mix it in with the craft dinner.
Break some crakers up in your hands and let them drop in the mix.
stir.
Pour mix into oven dish.
Pre heat oven 350 degrees
*optional* (if u want to add another layer of crushed crakers to the top-go ahead)
finish with some grated cheese going on the top layer.
put into the oven for 20-30minutes.
Simple. Enjoy.

MOIST BANANA BREAD
OK i just whipped up three loaves of this great moist banana bread.
When it comes to banana bread,,its got to be very moist!(well at least for me)
Here's the stuff you need:
3 1/2 cups flour
2 cups sugar
1 cup of oil
1 tsp salt
1 tsp of cinnamon
6 mashed up banana's
3 eggs(mixed up)
1 1/2 tsp of Vanilla
1 tsp of baking powder
now you mix all of the above in a big bowl
optional: 1 cup of chocolate chips and/or
1 cup of crushed pinaple(use a blender if you like)
Pre heat the oven at 350 degrees...
now pour your mix into 3 small loave pans(or 2 big ones)
note: be sure to grease the pans before you put the mix in.(spray with Pam cooking spray or butter)
Looks like your ready to put those loaves in the oven. :)
cook for 50-minutes to 60 minutes.
remove and let cool.

Heavenly Fudge Peacan Pie Recipe
How about some pie?
ok get to it!!
here's a small list of ingredients...
1/2 cup sugar
1/2 cup flour
1/2 cup cocoa
1/4 tsp. salt
1 1/4 cups of melted butter
1 1/2 tsp. vanilla
1/2 cup chopped peacans
unbaked pie shell
1 cup peacan halves (not chopped.yes more peacans)
..................................
Alright now combine sugar,flour,cocoa,salt.
Next stir in chopped peacans. Pour filling into pie shell. Arrange peacan halves over filling.
.............. .....
Now Bake at 350 degrees for 50-55 minutes until set.
Remove. Let cool and serve with some whipped cream.
Enjoy!
